Raw & Gluten Free Vegan Raspberry Cheesecake

Recently, my Great Aunt came into some money and was generous enough to share it with her family. For such a long time, I’ve wanted a proper multi-purpose food processor to assist me with all the delicious vegan recipes that I’ve had to dismiss in the past. I wanted to christen the food processor with a Raw Vegan Cheesecake as the first one I ever made using a regular blender took a lot of effort and the end result was not particularly aesthetically pleasing.

This time around, the process was effortless and enjoyable therefore I wanted to share this simple, delicious recipe with you!

Raw & Gluten Free Vegan Raspberry Cheesecake

Ingredients:

Base/Crust:

Almonds
2 Cups of Almonds (store in fridge for several hours before use)
Dates
1 cup of dates (soak for 10 mins, then squeeze out excess liquid)
Shredded Coconut
Shredded Coconut (use to cover the base of the cake tin before pressing the crust into it)

Filling – Top Layer

Coconut Oil
3/4 Cup Coconut Oil
Agave Nectar
1/2 Cup Agave Nectar
Lemon Juice
1/2 Cup Lemon Juice
Soaked Cashews
3 Cups Chopped Cashews (soak for 2 hours prior)
Vanilla Extract
1 Tsp Vanilla Extract
Raspberries
1 Cup Fresh/Frozen Raspberries

Method: *Prior to preparation – cover the base of a spring form cake tin with shredded coconut 1.)

Ground Almonds
Process Almonds until finely ground

Base
Process dates along with the almonds until the mixture is thoroughly combined. Press the mixture into the base of the cake tin on top of the shredded coconut.

Smooth Mixture
Blend raspberries, coconut oil, lemon juice, cashews, agave nectar, vanilla extract and a dash of salt. Pour the mixture on the base and smooth with a spatula. Pop in the freezer for several hours or overnight if need be.

Time To Taste: Before serving – allow cake to thaw in the fridge for 15-20 minutes. Serve & Enjoy!!! Slice

  1. Raw vegan cake. I’ve never known much about it, but it looks delicious and all the ingredients you used are things I like to eat. It would be a perfect cool summer snack. Great photos too and I like your moody style of photography 🙂
