Vegan Maple Joys!

Hi all!

Today I am back with another super simple recipe that has a vegan twist on an old party favourite of mine. Did you ever eat Honey Joys as a child? Well, yesterday I made Maple Joys! I bought them to my friend’s house for dinner and they were a big hit. These are so easy to make and very delicious. You may also be pleased to know that they are gluten, nut, grain and wheat free. Here are the ingredients you will need and the method to follow:

INGREDIENTS

– 4 cups of Corn Flakes

– 2 tablespoons of Maple Syrup (or plant-based sweetener of choice)

– 1/2 a cup of Nuttelex Butter (or coconut oil)

– Patty Pans

METHOD

1.) In a large saucepan, melt your ‘butter’ and maple syrup until it starts to boil

2.) Turn off the heat and add your Corn Flakes

3.) Stir really well and then spoon mixture into patty pans on a tray

4.) Bake at 150C/300F for 10 minutes or until slightly golden

5.) Allow to cool so mixture stays together. You can store these in an airtight container for a week. Enjoy!

VERDICT

This recipe made 9 which was a good amount for our small dinner. They were super soft, gooey and crunchy at the same time. I will definitely be making these again in the future. They are a great vegan alternative for children to take to a party or just as a fun treat.

I hope you enjoyed this short and simple post. Let me know if you make these and what you thought!

Peace & Love xoxo

  1. I love baked Corn Flakes! Had so many fond memories of them and your recipe reminded me of just how simple they are to make! Maple syrup sounds like a very convenient substitute if you don’t want to use honey and make it vegan-friendly 🙂 I really like making baked goods in small quantities – to keep them fresh, and making them all over again can be so much fun. Hope you are well my friend. Cannot wait to see you again <3 xxx
