Blogmas Day 4 – Vegan Butterbeer Recipe!

Hi all! Welcome to Blogmas Day 4!

Yesterday I revealed that our theme for Christmas Eve this year is Harry Potter. My entire family will be dressing up as characters from the Wizarding World, playing HP games and transforming my mum’s house into a magical Hogwarts. To make it more extra, I am going to be making vegan butterbeer for everybody to drink after the main courses. I recently trialed the recipe which I got from Penny’s Portal – but I added my own elements. It came out so well that I wanted to share it with you all. It is 100% vegan so everybody can enjoy it. Let’s get into it!

INGREDIENTS 

– 1 cup of sparkling apple juice 

– 2 teaspoons of plant milk (I chose a creamy almond milk)

– 1/4 teaspoon of cinnamon 

– 1/4 teaspoon of nutmeg 

– A pinch of ginger 

– A scoop of non-dairy ice cream (I used So Good Vanilla from Coles) 

– A drizzle of vegan caramel sauce (I used Natvia Caramel Topping from Woolworths)

METHOD 

1.) Mix spices and plant milk in a small bowl

2.) Pour sparkling apple juice into a glass or mug

3.) Pour spice/milk mixture over apple juice, stir and then add the scoop of ice cream. Top with caramel sauce and extra cinnamon.

It was so delicious and the caramel sauce just added an extra flavour hit. I’m really happy with how it came out and look forward to serving it Christmas Eve. Let me know if you’ve ever made vegan butterbeer or if you plan on trying this recipe.
