The Vegan Cookbook Challenge #3: Raw Coconut Fudge – March 2021

Today I am sharing my third re-creation. Using a number generator, I landed on page 205 of The Vegan Cookbook for Beginners and the result was a simple recipe for Raw Coconut Fudge. Check out the menu category to see my past attempts. Without further ado, let’s see how I went below.

RAW COCONUT FUDGE – THE RECIPE

INGREDIENTS

– 1 3/4 cups of chopped Walnuts 

– 2 tablespoons of Maple Syrup

– 1 tablespoon of Water 

– 2 tablespoons of Coconut Oil

– 1 1/2 cups of unsweetened Shredded Coconut 

– 2 tablespoons of unsweetened Cocoa Powder 

– 1/2 tablespoon of Vanilla Extract 

– A pinch of Ground Nutmeg 

METHOD 

1.) Finely chop 1/4 cup of the walnuts and set aside.

2.) Place the remaining walnuts in a food processor and blend until it forms a coarse flour.

3.) Transfer the flour to a bowl and stir in the remaining ingredients, including the 1/4 cup of chopped walnuts.

4.) Stir until the mixture is thick and well combined.

5.) Put the fudge into a dish to 1-inch thickness.

6.) Cover and chill until firm (about 1 hour) and then cut into 1-inch squares.

RAW COCONUT FUDGE – THE END RESULT

This dessert was so easy to make! I was actually surprised how simple the recipe was. It tasted delicious too. My only criticism was that I felt it needed more sugar as the cocoa powder made it a tad bitter. The crunchiness of the walnuts and the shredded coconut were a stand out for me. I highly recommend testing it!
