Today I am sharing my eighth re-creation. Using a number generator, I landed on page 106 of The Global Vegan and the result was a recipe for Brussels Sprouts with Bakon. Check out the menu category to see my past attempts. Without further ado, let’s see how I went below.
BRUSSELS SPROUTS WITH BAKON – THE RECIPE
INGREDIENTS
– 350g Brussels Sprouts, trimmed and halved
– 1 tbsp of Olive Oil, plus extra to serve
– 2 tbsp of Slivered Almonds
– 1 Garlic Clove, finely sliced
– 1x quantity Plant-Based Bacon, crumbled
– 1 tbsp of chopped Dill Fronds
– 1 tbsp of freshly squeezed Lemon Juice, plus Lemon Wedges to serve
– A pinch of Sea Salt and Chilli Flakes to serve
METHOD
1.) Bring a large saucepan of water to the boil. Add the Brussels sprouts, then cover and boil for 5 minutes. Drain and set aside.
2.) Heat the oil in a large non-stick frying pan over high heat. Add the Brussels sprouts, almonds and garlic and saute for 4 minutes or until the Brussels are golden in parts.
3.) Transfer to a serving plate and scatter over the vegan bacon and dill. Drizzle the lemon juice and a little extra olive oil and sprinkle with salt and chilli flakes, to taste. Serve with lemon wedges.
BRUSSELS SPROUTS WITH BAKON – THE END RESULT
There is no grey area with Brussels Sprouts. You either love or hate them. I LOVE them! Always have! This dish was by far the best one I’ve made since I started this vegan cookbook challenge. It was so delicious, easy to make and satisfying. I used the Veef Bacon Bits. I was a big fan of their taste and texture. I didn’t top my plate with chilli flakes or dill fronds, which was just a personal choice. Other than that, I followed the recipe to the letter. The flavours all worked together so perfectly. It was the most enjoyable lunch I’ve had in a long time. Highly recommend!
