The Vegan Cookbook Challenge #13: Anzac Biscuits – January 2022

In 2020, I outlined the ins and outs of: The Vegan Cookbook Challenge! Click the title for more information.

Today I am sharing my 12th re-creation. Using a number generator, I landed on page 202 of The Global Vegan and the result was a recipe for Anzac Biscuits. Check out the menu category to see my past attempts. Without further ado, let’s see how I went below.



– 120 g (1 cup) of Spelt Flour 

– 1 tbsp of Tapioca Flour

– 1/4 tsp of Sea Salt

– 100 g (1 cup) Rolled Oats

– 60 g (1 cup) of Shredded Coconut

– 80 ml (1/2 cup) of Coconut Nectar

– 80 ml (1/2) cup of Olive Oil

– 5 drops of Liquid Stevia (optional)


1.) Preheat the oven to 170 C fan-forced. Line a baking tray with baking paper.

2.) Sift the flours and salt into a large mixing bowl. Add the oats and coconut and mix well.

3.) Heat the coconut nectar and olive oil in a saucepan over medium heat. Bring to a gentle simmer, stirring, then remove from the heat and pour into the dry ingredients. Add the stevia (if using) and 2 tablespoons of water and mix to form a dough.

4.)  Roll the dough into 12 even-sized balls and place on the prepared tray. Gently flatten to about 15 cm thick, leaving room for spreading.

5.) Bake for 12 minutes or until golden. Allow to cool for 30 minutes, then transfer to an airtight container and store in the pantry for up to 3 days.


This might be the worst creation I’ve made so far. I don’t know where I went wrong but these came out extremely hard, dry and bland. I will admit, I didn’t use the optional liquid stevia and swapped coconut nectar for date syrup but other than that, I stuck to the recipe. I was hoping for a more chewy, softer consistency. If I ever made these again, I would cook them on a lower temperature for less time and maybe add more wet ingredients. It’s a shame because they had a lot of potential.
